That would be a lot of cost and work for whatever convenience you think you would gain. I would simply lock the one side shut (there should be a bolt that slides up into the horizontal header above the door) and leave it at that. Then, experiment with masking it visually: Paint the door and trim the same color as the wall, so it doesn't "read" as a door. Or, put a bookshelf in front of it.

First pry off your trim to reuse, score on edge with a box knife and use a mini 7" pry bar. Pull the nails through the trim with pliers to keep from splitting the trim.
Remove old door. Then decide where the door is to go, left side? swing in?
So using the measurements from your video, frame in the extra space with 2x4s to the rough opening dimension, then add drywall to extra space.
