Could you use Shiplap as a backsplash and stencil a rooster on it? I have a very small eat in kitchen.

Why not? I might treat it to waterproof it, or seal it, but I think it would look amazing.

Yes. Make sure you use a good, waterproof finish on it, for durability & so you can clean it easily.
