Does anyone know what this weed is?

My husband bought some mushroom compost to amend the soil in our raised beds and these have grown like....well, like WEEDS! I have no idea what they are, but I'm hoping they might be good for something.
I would say this is Amaranth, otherwise known as pigweed. I have it in my garden every year as it comes up all by itself. I never have to plant it because it goes to seed very early. I cook it like spinach and its very good. I use just the top 3 inches of it. Once it gets too tall the leaves become tough. If you want it to come back again just neglect pulling up one plant and your garden will be full of them again next year.

Do you have an Extension Agent in your area? They are usually associated with a University that has a Agricultural department, but has offices "in the field". They are very helpful in identifying plants and insects and other things that affect your garden or land.
