Ideas what to do with this organizer...I don't know what's it called!!

You could use it's a night table or if you have room in the bathroom it could use it to hold your blow drier and other essentials as well as extra toilet paper and towels. As for what it is called I call It a storage unit with 3 baskets you could also. Spay paint it to match where you are using it.

  My first thought, too. I have a small (roll around type) cabinet next to the commode to hold extra paper, sanitary and cleaning supplies. Wish I had enough room in my personal bath (on suite?? lol) to do the same.

Onions and potatoes storage and top drawer for reusable bags etc.?

I first would spray paint the baskets different bright colors.. It could be used in so many areas of the house, by the front or back entry. In a bath or bedroom.. I think it just needed to be brighten up...

In the bottom of the closet to hold seasonal stuff like flip flops or winter gloves ect.

Paint wood off-white, distress lightly, and leave the baskets as they are. Great for wherever you need storage.
