Since then, there is a lot of debris in the ventilation system. The restaurant thinks it's because of the roof repairs. The building owner says it's just the grease from the restaurant. Anybody every come across this

The "proof" should be in the debris itself. Greasy type residue is much different than "chunks" of tar paper sawdust etc. An inspection of the ducts should see who is correct. On thing to keep in mind is a "greasy" duct will act like a magnet for other debris and if other stuff is stuck on top it could be a combination of both. You also need to take the flow paths and directions of flow in mind. Kitchen "exhaust" will be blowing from with in the building to the outside, if this was running during the repairs it is unlikely that debris would get sucked in as it would fight the exhaust flow. Ventelation "inlets" however are a completely different animal.

As a commercial construction superintendent for 25yrs who specialized in retail renovations I can tell you that this is a common problem. Usually during a remodel the rooftop units are replaced along with the duct system. I never ran the new or old system during construction because the filters are not fine enough to stop the fine dust ( such as drywall dust ) from getting in to the ducts. And it was usually necessary to have the ducts cleaned before starting up the units to protect the new finishes In this case I agree with KMS in that examination of the debris should determine the culprit..

Roof repair contaminants and dirt from restaurant grease are different problems. Anyone can tell by simple inspection. Whatever the type of contaminants you have, you can easily remove it with the help of EPDM Liquid Butyl Rubber’s “Roof Protect/Cleaner” as it gives the best outcomes that are not possible with other cleaners. Roof Protect emulsifies contaminants and provides improved surface preparation and adhesion by effectively removing oil, grease, moss, mildew, dirt, and other soils from the roofing membrane. This eco-friendly, biodegradable cleaner also contains a mildew ide to kill any mold spores on the roofing membrane. I always recommend this amazing product to all house owners.
