How to Can Peaches as Home

Every year we take a trip to one of the local orchards to pick peaches. We get anywhere from 3-5 bushels to bring home and can. Canning isn't a hard process once you get the hang of it and it's worth the effort it takes. There's nothing better than eating local, home canned peaches in the middle of winter!
Your fruit should be top quality. Canning will not improve flavor or quality.
Peel the peaches and slice them or cut them in half.
Cut, remove the pit, and simmer in a syrup for about 5 minutes. You can use all sorts of syrups from a heavy, sugar syrup to a more natural one using juice or even just water.
Fill the jars and process in your boiling bath canner.
