Cutting into the drywall, you will expose studs that would have to be cut out, reconfigured, and supported similar to cutting an opening for a window or door in a wall. Any plumbing in the wall would have to be reconfigured too. Which may be improbable. Also the depth of the wall is only 4". i don't know what width you need, or have available. If you have about 32" wide, IKEA Billie bookcase is 11" deep. Secure it to the wall, cut out a convenient kneehole, securing shelves with L-brackets, and you've also room for some storage. It's 41" tall, so you will probably need a stool. Or turn it on its side for less height and store towels, etc.
Not gorgeous, but then you might be far more creative than I at the moment.
Have you looked for "narrow console table".. They're out there. If you're concerned about wood top, you can always poly the wood, or do a fun tile on top.
Let your imagination go! Think cabinet, bookcase, nightstand, dresser? You could turn almost anything into a vanity if you use your imagination. Google it and see what kind of ideas you can find.
