Does anyone know what the name of this flower is?

There are little purple wild flowers that grow in Texas (I live in Spring - near Houston)r normally spring up in Spring that are shaped something like a MULE'S HEAD that I have called "Mule's Head" since I was a child. I am wondering what they might actually be called. Thanks!

Is it perhaps a Centaurea americana or star thistle?
Is the flower straw like to touch?
Could be a straw flower, but because it's spring blooming, it could be Japanese anemones, or thistle. If we could see the leaves, it would probably help in the identification!
