Hi Laura-lee, my mother taught me to put the fresh picked cucumbers in a bag, shopping bags from discount and grocery stores are fine. Don't wash them before storing. Loosely wrap the bag around your day's harvest and store in the frig until you have enough to make your pickles or relish. You want the bags loose enough to keep the cukes relatively dry in the frig, they tend to get wet and will rot if too wet. If I put them in the frig without a bag they dry out too much and shrivel. My family loves the sweet relish that Mom would make each year so I continue her tradition by making enough relish for us and my uncle, using the recipe she always used. I hope you have a great crop of cukes and successful pickling!
Sure! You can find it in the Ball Blue Book, it's simply called "Sweet Pickle Relish". Try it as printed and can in half pints then if you enjoy it as much as my family, it's easy to double to can in pint jars. I have never tried a bigger batch and putting it in quarts for fear of breaking my glass top range. I have also successfully frozen this relish.
