I have been collecting my potatoe peelings , and other veg peeling, fruit too, and coffee grounds and added dried leaves. Should I be adding anything else to this and how long does it take to be able to add the dirt .

You can add lots of things...old bread and buns, citrus peels, dry cat or dog food, ta bags (remove the staples), tea leaves, etc. You can ever add pine needles, sawdust, and fireplace ash in small amounts. If you live in a coastal area or have access to algae or kelp, it is also great for composting!

And every 6 months you turn the whole mount upside down. When extremely dry weather think about water it. You can also add ashes from the wood-stove or BBQ. If you happen to find an earthworm while working in your garden, you can add him too, just scoop him up and gently put him on the heap. He will be very happy and your heap will compost faster. No meat, bones and oily stuff like mayonaise and ketchup. One other tip : crunch your eggshells before putting them on your heap..
