You can buy block stencils in all kinds of designs either online, like Amazon or at craft stores like Michael's or Hobby Lobby.

If you like tiles but don't want to do all of that work, the peel and stick tiles are great! You can get them on Amazon and there are a huge variety to choose from.

Buy sheets of stainless steel cut to your specific size, or use the vintage ceiling tiles. Whatever you choose make sure it cleans easily. If you don't mind the work, and just don't like the look of tile, what about using broken china and making it a mosaic.

my current house has a built in back splash from the counter installation. my last house didn't, so i used a hi gloss, scrub-able paint and painted one. used a shade of paint that complemented the oak cabinets, and did a smaller stripe above it in a silver paint.
