check out a book on companion planting or check for a web site. how much of what to plant depends on how you plan to use your garden. some plant a garden for a summers worth of of fresh veggies, others to home can/freeze the garden produce for use later in winter/spring. generally you would plant you normally would buy from a grocer's- or what you can't find at the grocer's but like to eat.
the seed package will tell you how to space out your seeds/transplants when you plant them in the garden. for instance an edible flower is nasturtium. these are started in a garden, not trans planted. plant 1/4 inch deep. that's about the length of the nail bed on my pinky. when it says thin to...x, why plant more than what you want? just plant them at the recommended "thin to" spacing. which for the flower would be 12 inches apart. my gardening shoes- the sole is 12 inches long.
as far as the order to plant in, follow the sun. short stuff facing east, med. in middle and taller to the back. my place is next to a street lamp....the plants tend to lean that direction.
