I am using Subway tiles for a backsplash in my kitchen, is the starting point in the middle or do I start at the end and work my way around

If you have a corner start in the corner and work out. If its a straight wall start from the most visible end working to the other end.

Agree, make sure that you start from the end that will be seen first and/or most. Make your cuts where they will be as hidden as possible.

Lay out the tiles on your counter and see where the cuts are going to be, plan plan plan before you glue. The smallest cuts need to be in the area that is seen the least when you enter the room.

I always start at center. It visually balances both ends this way, but your mileage might vary.
