Not exactly sure what we can help you with ,perhaps a little more information is needed.
I have never done it, but I would purchase big blocks of brick style cheese, cut into squares and carefully use a pairing knife to hollow out each square carefully not to pierce the bottom. Use the hollowed out scraps for another recipe. You could also sculpt the sides into a round shape if desired.
