Many Hometalkers have used pallet wood on walls. Amazing how popular it is.

My brother took different sized pieces of pallet wood sanded it put it on the walls stained it with a light strain and then varnished it. The room was beautiful.

Be careful with wood pallets. This really bothers me when you see so many diy projects reusing pallets and not telling anyone about the risks. Pallets MUST BE treated to prevent bug infestations. There are several ways a pallet can be treated...chemicals are one way. You must avoid using the ones treated with chemicals indoors. The off gasing over time can cause problems. If a pallet is unmarked or has mb marked on it, then it was more than likely treated with a chemical methyl bromide. If a pallet is marked ht, then it was heat treated and is probably safe to repurpose. Some can be kiln dried too this are marked kd and would also be safe. Remember the chemicals are the cheapest and easiest way to go so,there are far more chemically treated pallets out there than not.
