My gardenia leaves are pretty black from a freeze, will it come back?

Is the rest of the plant in good shape? If so, yes. No knowing your location, I would carefully pluck off the bad leaves and water and feed as necessary.

Do the entire plant freeze?

if it froze hard enough for it to turn black I would say no
