How much l damage will I do if I dig up, separate, and replant daffodils now instead of digging them up and waiting for fall to replant? I have many allergies/ respiratory issues and am leery of waiting to replant incase I cannot do the planting in the fall.

The ideal time to transplant and divide these would be after the foliage dies back. But it should be whenever it was convenient as well- before blooming, during blooming, after blooming. Actually during blooming is my favorite because I can see what the blooms look like. Most of these varieties are very hardy, they aren't bothered by critters, and they come back fine.

The dying of the foliage is what builds the next year's blooms. If you can replant them without too much shock the foliage may still dye naturally and not be a problem at all. You will need to cut the roots back some so that they are not all bunched up in the planting hole. Give them room to spread, make a pyramid of soil in the center of the hole, spread the roots around it and keep them watered.
