You can have as many different piles as you have room for. Personally, I like to mix some leaves in with my vegetable scraps. Also, I like to grind my vegetable scraps with my blender before putting them in the compost pile. It hurries up the decomposition process.

Compost consists of brown (dead leaves) and green (vegetable scraps) matter. Having just one component will take forever to decompose and give you the good compost you're working for. These two together will get your pile temperature up to 140+ degrees, accelerating the breakdown of the brown matter. Don't forget to ask your local Starbucks for their free coffee grounds to add to your pile.

You really need to have a good mix of greens and browns in the same pile to compost well. The pile must be watered and turned occasionally as you add more composting materials to it.
