Can medical grade mineral oil be used instead of the food grade mineral oil as this is more expensive.

Basically medical grade mineral oil and food grade mineral oil are one and the same thing. Both are used to maintain butcher block/cutting boards because neither of them have chemicals and/or scents added to them. Unlike other oils, such as peanut oil, olive oil, etc. mineral oil will not go rancid - regardless of the additional verbiage used to describe the product. Your decision is sort of like deciding if you buy the C&H Pure Cane Sugar, or do you buy the store brand. C&H would like you to believe, their brand is the better choice. Question is, can you really tell the difference?

I would stick with food grade oil or paste ---you don't know if the other will significantly discolor your butcher block.
