You could build or put a shelf there. Then you could put supplies, plants, or display items you enjoy. If you don't like that idea, you could build a back splash using tiles, contact paper, etc. Dollar Tree also has great wall art stickers you could put in that space - inspirational words, art, etc. Framed artwork would go nicely there as well.
