It kind of depends on the things you plan on doing. I know I'm all over the board with the things I like to work on so if I were going to build my dream station I would go with metal. It's durable, things don't easily stick to it, and clean up is easy. I have an old table I like to work on that has a metal top that used to be called a piecrust top because that's what it was perfect for. Acrylic and chalk paint don't stick on it, I don't have to worry about the hot glue gun, and it's great for kneading clay.
