How do you measure door hinges for replacement?

I'm trying to replace door hinges on a set of French doors and a bathroom door. I want to make sure I get the same size, thickness and shape (round edges and square edges) to fit the old mortises. I'm just looking to change color (gold to nickel)

Can you take them off and take them along to the store? If not, measure al the widths and lengths and take a picture along with you.
