Luckily for you they now make peel a stick back splash that practically anyone can do.

I personally dont think its too difficult. Find a tile that you like....take some measurements and do a little math to find your center and go for it. They have premixed setting materials (adhesive and thinset) and premixed grouts now so thats one less job to worry about. Straight cuts are easy if you have a tile cutter its the L shaped cuts around electrical outlets that are a little more challenging but if you have the right tools (4 inch grinder with a diamond tip blade or a wetsaw) then you can do it. If you dont have these tools you can have your cuts done at home depot or rent the tools from them. And they offer a DIY ceramic tile backsplash installation class thats quite helpful, too. Hope this helps =)

I've used a product from Menards called Facade. It comes in a variety of styles, can be cut with scissors easily and can be attached with adhesive.
