What are the varieties?What is your location?
Just my thoughts, but the tree will mature to the size that the roots will expand to. I'd change pots as they expand to fit each pot. THe fruit, too may be smaller. Good luck! Sounds like a good idea! I may borrow it! Do you bring yours in, in the winter?
Dwarf citrus can stay potted but full-size need to go into the ground.
Make sure you re pot periodically for optimum fruit bearing. They can get root bound.
