We have built-ins on either side of our gray brick fireplace, and I would love to paint the fireplace out in white. However, my husband feels it would be a bad idea.

You could probably paint it with chalk paint, it adheres to most anything. Just clean it, give it a light sanding if you want, and paint with chalk paint. I think you could also use latex paint if you use the right primer first, like Zilsser 123 or Rustoleum Transformations.
Make sure its clean and dry. Lightly sand to remove any gloss and roughen the surface for paint. Prime with a good stain blocking primer like Zinsser 123 or BIN. Paint with your color. Seal with at least three coats of a water based polyurethane. Use a foam roller and foam brush for a smooth finish.
