where do you live? It's a COOL weather crop. Available in spring...you know like strawberries...limited harvest.

It sounds like it may be too warm where you live. Rhubarb typically only does well in cooler climates. The heat will make it bolt and it won't do well.
Pick your rhubarb before it blooms, very short growing season. you might get more if you snip off blooms just as they appear.
This is normal for rhubarb. You'll need to pick the stalks prior to blooming and going to seed.

It doesn't hurt to cut off the blooming stalk before they flower. If you don't, it retards the growth of the usuable stalks. I do this all the time and still have a gigantic rhubarb plant.
