You could try fabric paint on them, however, it may make them stiffer than they are now. Or try bleaching them to remove the bad colors and start over again...
I would give the black another dye bath dipping or 2. When dyeing black it rarely really gets black on first try. Mix the dye in a bucket or tub, and dip, let sit for awhile. Then do your rinse with vinegar or salt to set, and dry. If still not black, do it again.

What kind of sofa covers do you have? Do they detach from the cushions or not? If they can be removed, you could use them to create patterns for new fabric replacements and reuse the zippers on the original covers. If they don't come off, you could simply wrap the cushions in new fabric and hand stitch the sides closed. If some of your covers are extra pillows you have several choices. 1) Reuse the existing pillows by replacing the covers with fabric in the same manner as either removable or non-removable larger cushions or 2) Reuse the existing pillows by wrapping a coordinating or contrasting fabric around them in a manner similar to wrapping a gift or 3) Simply replace with new pillows from your favorite retailer or thrift store. (I usually try the thrift stores first.)
