Good Morning Tony! :) Shiplap instead of sheetrock. Seems to be a very popular choice lately. As far as appearance is concerned, that would be a matter of personal choice, but as far as most economical choices, the new trend seems to lean more toward pallet wood. Of course this is more work because you have to find pallets that are marked HT and totally steer away from any pallets with MB on them --- or you could buy them instead of searching them out, but you still have to check for the HT stamp on them to be sure they are safe for human use (it means Heat Treated as opposed to chemically treated). I think you would be better off putting sheet rock up first then your ship lap over that. Do you plan on doing the whole inside with ship lap?
Another idea is to install drywall so you have a better wall structurally, then use pieces of bender board to give the appearance of shiplap. That way, it is lighter, thinner and easier to work with....plus you can remove it later if you no longer want it.
