Can a food thermometer be used in candlemaking?

Yes, it can because it can be clipped inside the pan in which you are heating the candle wax. Specifically a candy thermometer, since it is accurate for measuring the temp of liquids. The thermometer should not touch the heat force because it may break or explode. Best wishes 😇
