Which I've spaced 1 1/2"apart thinking I would place fake grass between, is there an easy way to do this? since I didn't anticipate the vertical crossings.

Maybe you should have laid the fake grass on top of groundcloth then laid the pavers?

Cut the artificial grass in strips, then cut the strips for the shorter crossings in the length you need. I would lay the long strips first, then put in the short strips.

It would be easier to plant the spaces with creeping thyme, which will hold up to light foot traffic.

Someone just did a driveway like that in my neighborhood but they poured cement in squares, leaving the space. Underneat they had packed sand. It seems to be complicated, I did not see how they actually installed the fake grass but I do know they could not drive on it for quite a few days. It does look beautiful!

it seems it would be easier and more durable to put a low growing plant like creeping Jenny.
