Why not? As long as you are very, very careful taking the granite out so it doesn't crack. If you keep the same layout/measurements it should be feasible.
Almost anything is possible. Contact a good carpenter (Get references!) If your new cabinets follow the same foot print as the old ones, this should not be a problem. Workers - you'll need several w/ muscle. Granite is heavy!
