You can. But it may not be true to the peach you just ate. All fruit trees are grafted now.
Dry first then put in fridge and in Spring put in the grownd.

It will take a boatload of patience but it can be done. Ir will be at least 3 - 4 years or more before it starts producing. Here are a couple links to help you out and getminate the seed.

If the peach pit comes off of a peach tree that has not had chemicals applied to it, it more than likely will germinate. You just need to keep it in warm moist soil and leave it in a bright spot.
