You can buy peel-and-stick countertop finishes that actually get pretty good customer reviews. Here's one example: https://www.amazon.com/dp/B01KEPZVN6/ref=cm_sw_r_tw_dp_x_YogMzb2Q2K1M0

I have used the Rustoleum countertop restoration in our rental house. I recommend doing several coats as the paint can scratch off. With different renters moving in and out, we've been very pleased with the product and the counters look brand new. It's also very easy to do.

I used contact paper that looked like granite. It lasted 2 years and I finally had to peel it off because my daughter spilled her nail polish on it. No fading or problems even cleaning it with detergent and placing hot items on it. I'm planning on doing it again in a different color this time. Here are before and after pictures. Best thing is my counter is 9 feet long including the sink area and it only took one roll of paper for 5.99!
