There is a bit of an art to mudding drywall. It is hard to get it completely smooth. You might try getting another professional to come in and give you a bid or some ideas.

Coat the surface as smooth as you can. When it's dry, use a drywall sander (a long stick with a rectangle on the end) and screen (goes on the rectangle and comes in different finishing grades) to flatten out any ridges and smooth it out. Now, look at your surface for divots. If there are small ones here and there, fill them like you would nail holes. A SLIGHTLY damp rag can help smooth things out in the corners.

It might not be perfect but you should be able to get it looking good. If you have trouble climbing up and down a ladder with your knee, maybe a family member can help you or you could do the ceiling once you've recovered?

Good luck with your Kitchen AND your recovery

Did you pay him for the whole job, if you did and it is not finished get in touch with your local better business bureau. If you want to attempt it, you just need to be patient and small small amounts instead of one big glob. It will be way easier to sand and get that finish that you are wanting

If you want to go after the guy who won't finish,,,, if he is a licensed contractor, file a complaint with your state contractor licensing board.

Take lots of pictures and take him to Small Claims court.

What you want is called skim coating, buy a bucket of premixed Joint Compound. Get a 12" trowel blade. Put the compound on either a hawk or in a plastic tray.

Here are a lot of videos on how to.... https://www.youtube.com/results?search_query=how+to+skim+coat+wall+with+joint+compound

Make sure all the glue is off the wall first, I just use a sander after I remove wall paper for people.

PS get that last guy who gave you the quote, to write up his quote to fix so you can add it to your complaint or small claims case.
