Mainly it grew to fast
I would have guessed that the pit splits because the new peach plant growing inside of it wants to get out so that it can eat the peach.

The peach grew to rapidly.
Im dehydrating peaches right now and was wondering the same thing. Every peach I cut had a split seed. These were conventional peaches. Thanks for the answer!
