Counters (even Formica type) can be faux painted like marble, etc. You can get instructions and top coat and care information from a good paint store/company like Benjamin Moore.
You could do a concrete countertop by just using feather finish and spreading that over the countertop, here is a link to help:

We had our super ugly granite countertops covered with concrete and epoxy by a company called iCoat. The counters look like marble, beautiful. We also had the horrible uneven, unsealed slate floors done. This project cost us 1/8 of what it would have cost to tear out floors and counters. Not much down time either.
