Wood to metal caulking for cold temperatures

I have a typical patio enclosure room off our dining room. We use it early spring to late fall. Since it's not heated we only use it to walk through to let th dog in and out. It can get almost to 0 degrees in the winter.
I would like to attach long wood trim over the white connector strips on the ceiling. I'm not sure screwing the wood on is a good idea and I was thinking about using a caulking that would attach wood to metal and hold up in a
cold environment. Or if anyone knows if small maybe one inch screws would work.

    i think the screws would be more efficient. As then if you have to move any things just back out the screws

    I'm not sure what you are suggesting. This is a 3 season room. We don't want to insulate it. The ceiling is made from 12 inch aluminum covered foam, and it was built on an existing deck.
