Hello, I am planning on opening a gluten free bakery of about 2700 square feet. Assuming the kitchen will be about 30% of the square footage how much will it cost to pay for a completely new commercial kitchen?

I don't have an easy answer for you but commercial kitchen equipment contractors can quote you on the equipment...there are some out there that have used equipment as well. I suspect the more difficult part to budget will be the utilities to serve the equipment you want (electrical/plumbing) and hoods to meet code requirements of your area. I would suggest you browse, pick your equipment, lay it out, find out what is required utility-wise to make them run and then see what the intended space has available so you can get numbers to what needs to be added.
  • If your looking at new, plan on over $50 grand for the equipment at least. I did a commercial kitchen about 25 years ago They made cookies. Their investment at that time was around $20,000 used. Check eBay, Craig's list and auctions for the equipment as this type of equipment goes on sale and auction all the time. Do not forget license fees and all that stuff also. Depending on where your putting the kitchen you will have to undergo all sorts of township health requirements which includes equipment that you did not even know or need but they will require you to have. From exhaust hoods and special permits for those, to fire suppression equipment etc. Good luck however. I have several family members that live in your area that are health nuts and would be sure to visit when you open. Let us know how you make out!
