Concern: I was going to do that to, but a coworker said she did and she now has water marks from water running down or sitting on the counter She did use a sealer she said. She said there are other products to use that are oil based. They seal better.

Sal85902 is absolutely right! Just do a search on people who have regretted using chalk paint for kitchen and bathroom cabinets. Use the recommended paints for bathrooms.
No, after a couple coats of chalkboard paint, let dry then scribble chalk all over and dry erase. That's it.
