You can freeze eggs to cook with at a later date.
Put an egg in a bowl of cold water. If it floats, throw it away.
Get a pot, fill it half way with cool water. Place eggs into the pot. The ones that float right to the top will be the oldest. Because the shells are porous, air can get through the shell. The oldest have the most air in them, so they float.
Supposedly you can use them safely 4-5 weeks past "sell-by" date.
Former retail grocery store employee. The date is correct. Throw them out. If the the date says BEST BY you have time. With eggs you don't.

Eggs should last a month or so. Fresh eggs are difficult to make into hard boiled eggs so when mine are a couple of weeks old I make egg salad!
