We are in Arizona, which is also zone 9. Our Thompson seedless, are still quite green right now (we also have a Red Flame, and a Conord) Normally we wait until the leaves start turning brown, around the end of November, and then we use loppers or trimmers and cut them all the way back to the largest, gnarly-est limbs (we have ours on T posts with wire strung between). That is also the time to start layering on the rotted manure, so it slowly percolates down to get them ready for spring growth.
