How can I landscape so the grass will not grow over it. It is so steep, I have to DR trim it, the DR trimmer has actually drug me down the hill. I am TIRED of it and want to be able to mow up to (and maybe over?) the edging so I don't have this problem.

That's what all those gardeners on their hands and knees were for back in the 19th century. You can retard the growth and spread, but you are not going to stop it. Concrete, artificial turf, all drastic measures, but expect the great outdoors to intrude. Landscape cloth with crushed rock will slow it down, but weeds will take root on top of the cloth. That's why we call them weeds. They will be easier to pull - which refers back to my first comment.

Have you thought about ground covers? Some can be very dense and weeds won't pop through
