If you run it in a horizontal direction, there will be less cutting and fewer pieces, and less joining of the pieces.
If the contact paper is removable, as you mentioned, then I would suggest that you try one piece in the corner first to see how well it stays stuck in a warm room such as a kitchen under normal use and cleaning.
In an upright positon on the wall, gravity is sometimes stronger than the holding power of the sticky backing.

Sometimes it's easier to make a decision when you can see what it looks like first! :)

Start by cutting two semi-large pieces. Tape one in a vertical position with the back on it. Do the same for a horizontal look. Leave it on for a day or two, and see what look you like. It's hard to say what is best, without seeing it. I'm sure you'll make the right decision.
Horizontal. Would look more natural and would be easier to hang and remove. What a great idea!
