Bon Ami, Bartender's Friend, Brillo pad, baking soda and vinegar (yes, the combination is fun, but helpful), Comet and water. I usually soak them in hot-warm dishwater to loosen things up and then scrub.

I'm not a fan of oven cleaners, even in the oven, but it does work.

Try on stainless steel only... Spray with a top brand oven cleaner like ( Easy Off ) Let set over night if possible... Next morning spray off with water for a shining pan .... Also works on clear glass baking dishes( not colored ) ..... Never use on aluminum !!!

If they are copper bottomed pans (i.e. Revere Ware) a coating of ketchup (the acid helps) or toothpaste (like Crest) (mildly abrasive) will start removing the gunk, then use a copper cleaner or Bartender's friend and some elbow grease!
