They have peel and stick at the box stores. They look like stone etc but are peel and stick.
I put up self stick tiles, that look like vintage ceiling tiles. The home improvement stores have a variety of self stick tiles, that you can cut with household scissors
There is a post today about using the tin ceiling tiles as a back splash... simple to install, some what inexpensive(depending on the type you choose), can be painted or not, and they look good, and are easy to keep clean.
I've also seen some really nice bead board backsplashes.
