If sealing I would clean them well with TSP, sand down any imperfections, and the whole cabinet, clean up with a tack cloth. I use gel stain by General Finishes, topped with 2 coats of water based poly. Other option is to paint with the same instructions as above, just paint instead of stain.
dont be frightened! It can be done...just takes a little time. There are a couple of paint products that you can choose that minimize the prep work if you're not interested in sanding (chalk paint, fusion paint). I took at little extra time as I only did 1/2 the kitchen at a time to minimize the disruption. It took me approx 1 month of daily work to get it accomplished (but a ton of cupboards)
