Try tile, I would pick a glass tile. It's very easy to install.

I so wish I lived closer to you! This is just the type of project that I love to dive into!! But, alas, I am up here in Iowa, so all I can give is my opinion. I would lift off the old counter top, leaving the original framing. Then using the 2x8's you already have, and a good level, build your new counter top by running length wise with the boards (end to end and staggered). Leave about a 1 1/2" overhang at the open end of counter. Do not forget to add a finishing board under the end boards. A good trick to fill the cracks between the boards after they are laid, is too run a sander (the kind with a bag on it) over the boards. Then dump the contents of the bag into a larger old bowl, and mix with polyurthane (making kind of a thin paste) and brush onto the cracks of the boards. Once you have polyed the counters with finish coats, the poly/sand dust mix will blend perfect. The reason you use this mix is to make sure that the color used to fill wood matches the original wood perfectly, and with this mix, it will. Good luck and post pictures!

Fill with wood putty. After this hardens, sand. Then I would paint and varnish three coats sanding between each coat. This shouldn't cost you no more that $20-30 dollars. Have fun. sk

Natural wood is always nice, you can give it an antique look either by distressing it or a nice stain.
