Plant Perennial Vegetables and Harvest for Years!

Rhubarb is a gorgeous plant with it's ruby red stems and beautiful rippled leaves. The stems are the only edible part of this plant BTW, DO NOT eat the leaves... they are too high in oxalic acid making them toxic for consumption.
Jerusalem Artichokes ( or sunchokes ) are actually perennial sunflowers... well sort of. Actually everything about this plant from name to claim is a little off, lol. Check out the link to learn more about this yummy delicacy.
Once your asparagus gets established you'll be harvesting fresh spears for years...and years... and years! I love it steamed with a little lemon, fines herbes and butter...yum!
