Growing Beets From Kitchen Scraps

Beets grow easily in a deep container and the plants are actually quite beautiful for a vegetable.
One day I realized that the not-so-fresh beets might just start growing if I planted them. Low and behold, it works beautifully!
I've tried it multiple times over the past year and love how easy it is to turn would-be compost into a flourishing plant. Bonus: Now I can just harvest fresh beets when the mood strikes and no longer have a veggie bin of poor dejected ones.

You can almost grow any root vegetable like that, especially onions and garlic. I use the ones that are of no value to the kitchen and put it in soil and then have all the green onion tops I desire. Potatoes--white or sweet--are other good ones. Actually with the garlic, I just snip off the root end when I clean garlic for cook and save the root end in a napkin until I get 4 or 5 ends and plant them all together, it yield a nice bunch of garlic chives.
