I have seen laminated flooring used on ceiling - is this what you are referring to? the design of most of these is to be able to expand/contract if you were to use them on the ceilings you would have to run something solid to glue them to so that they do not fall. Probably a bad idea in moisture rich areas. I have seen decorative beadboard in stain grade you may be better attaching that to the studs in the ceilings, (maybe stain it beforehand), then countersink the fasteners and use color match putty over them and then use a urethane clear finish over it as it is rated for indoor/outdoor (damp conditions) .my 2 cents

I wouldn't recommend it, given the humidity in the bathroom. Unless it was just a 1/2 bath that is rarely used...but not one with a shower. Popcorn ceilings are surprisingly easy to remove by scraping them, and with a little retexturing your ceiling can look new again. Much cheaper than planking, and more resistant to water damage and humidity.
